MANZANILLO:
- Spanish variety
- Dual purpose
- Well-known for excellent properties as a table olive
- Ranked as one of the world's No. 1 table olive
- Distinctive oval shape with white dots
FRANTOIO: also known as Paragon
- Italian variety.
- Considered primarily as a high quality oil variety, but can be used as a table olive providing an exciting nutty flavour.
SOUTH AUSTRALIAN VERDALE:
- Australian variation on the Verdale variety, introduced through early plantings in South Australia.
- Dual purpose variety, excellent for both table and oil, but primarily used as a table olive by Barfold Olives.
HARDY MAMMOTH:
- Australian origin.
- Can be considered a dual purpose fruit, but generally considered as a pickling olive due to its large size.
- Excellent texture and flavour for pickled olives.
NEVADILLO BLANCO:
- Spanish variety.
- Excellent quality EVOO
- Small sized fruit
KALAMATA:
- Greek variety.
- Considered to be a dual purpose variety, but primarily used as a table olive due to its high regard as a pickled fruit.
- Excellent oil quality when crushed for oil.
- Distinctive size and shape - bent tip.
TINY OIL KALAMATA:
- Greek variety.
- Small fruit primarily used for high quality extra virgin olive oil (EVOO).
- Similar in shape to Kalmata but smaller in size.
